Mini Key Lime Pies with Whipped Cream
sweetened condensed milk
tart-sized pastry crusts
key lime juice
heavy whipping cream
Preheat oven to 375 degree Farenheit
Combine egg yolks, sweetened condensed milk, and lime juice in a large bowl. Stir well.
Pour mixture into individual pie crusts.
Bake in the preheated oven for 15 minutes.
Allow Pies to cool in the fridge while preparing the whipping cream.
Combine heavy whipping cream, sugar, and vanilla extract in a medium-sized bowl. Use a fork or whisk to mix until the whipped cream is soft and fluffy (about 5-10 minutes).
Slice lime into wedges.
Top each pie with a dollop of whipped cream and a slice of lime.
